I found this on a fellow MPMers menu and was intrigued. I bought a wheat pizza dough from the supermarket and I am changing out feta (blech) for goat cheese and we’ll see what happens!
two pizzas worth of toppings:
3 cloves garlic, minced
2 T extra-virgin olive oil
1 ear of corn, kernels removed
pinch of black pepper
1/2 t red pepper flakes
1 lb Mozzarella, shredded
1/2 onion, thinly sliced
zucchini, thinly sliced
feta cheese, crumbled
fresh cilantro (coriander) leaves, coarsely chopped
juice of 1 lime
Preheat oven to 450 degrees.
In a small bowl, combine the garlic and olive oil and set aside. In a bowl, toss the corn kernels with the black pepper and red pepper.
Scatter half of the Mozzarella over the pizzas, leaving a 1/2″ rim. Place the onion over the cheese and the zucchini over the onion. Scatter the remaining Mozzarella over the zucchini. Sprinkle with the feta and the corn.
Bake for about 8 minutes then swap which rack the pizzas are on. Bake for another 5 – 8 minutes, til cheese is done to your liking ! Immediately after removing the pizza from the oven, brush the garlic oil onto the rim, squeeze the lime juice over the top and garnish with the cilantro.
It all started as a New Year's resolution for 2009. I wanted to start trying menu planning, a concept that I had stumbled across while looking for dinner ideas online. I dove into it with energy and unlike most diets, saw success immediately. The success only made me more interested in how I could improve, what new recipes I could find, etc. I started using my family blog for menu planning posts and it kind of started to take over. So, I decided to give my culinary fumblings their own home- and mygrandcentralkitchen.com was born.
Why "my grand central kitchen?" Well, I have 2 kids that are about 20 months apart. I have a husband who works from home. Cooking is a hobby for me. So you could say that aside from the playroom, the kitchen is the busiest room in my house and usually looks it. ;) It feels a bit like Grand Central Station, especially between 4 and 7 pm.
I hope that this blog gives me even more inspiration for my own home and the ability to inspire others in the kitchen, as well. I'll be posting not just menu planning and recipe links, but also interesting things I find online, things on my wishlist and recommendations. And who knows where it might go from there. :)
I certainly hope you enjoy the ride.

this was GREAT! Don’t forget the lime. I can see it really working well with chicken on it, too!
(we ate it so fast I didn’t have time to take a picture. Yum.)
