I was surprised at how good this was, especially considering that start to finish, it took me 25 minutes to make (I used canned beans and tomatoes, so I didn't have to cook the beans or cut the tomatoes myself). Next time, i might pick a different pasta, though. I'd like it to be more substantial in the soup. Make this!!!

Also, maybe a few tbsp. of minced garlic instead of the garlic powder in the rub. That would also change things a bit!

Actually, this was pretty good. :) My au jus was too salty. Fortunately, I served it with a boxed parmesan couscous which broke it up a little bit, but you may want to ease off on the salt portion of your rub if you do this, or substitute minced onion in lieu of the onion soup mix (which is traditionally pretty high salt). Yum!

Yeah, this rocked my world. I am beyond happy that a simple pantry recipe can be so yummy. The gravy was nice and thick and heavenly. The roast was moist but still sliceable (as opposed to falling apart). Even suitNtie is taking the leftovers to work for lunch tomorrow, it was that good. Wahoo!!!

How is the farm share working out for you?

Made this tonight since we got lots of arugula from our farm share and oh my goodness it was so good! So happy to have a spring/summery pork recipe since most of mine are so fall-ish. And it was so quick to pull together plus Seth even ate two helpings of the pork with some apple slices! Love!
